She said she is an avid reader of my blog and encouraged me to keep on going having read one of my posts I wrote about needing a break from writing. She’s clever, this one. She asked if I remembered advice I had given in class, and stated that she remembered me offering it to students on one pretty, spring day. The advice I had given was this: to step away sometimes from things we are working on and come back to them with fresh perspectives.

Yes, I do remember saying that. It’s one of my mantras for writing. Put it away, and then look at it again later.

The Art of Giving

I have been pretty open about not really believing in Karma, feeling it is mostly a scare tactic and have grappled with my own contribution to the universe after many a martini. Last week I had a situation that reaffirmed many of the existential life crises.

After spending the last few weeks traveling (#humblebrag) my Ashkenazi Jew fro had hit maximum brillo pad capacity. Being in desperate need of a deep hydration hair mask, I saddled up my pooch in his illegal service dog vest and walked to my local Rite Aid to load up on some vodka and argan oil treatments. Starting Something New: BuJo

The first time I saw “BuJo” written online, I thought it was the name of a dog or something. Who is this Bujo and why should I care about him? The queen of abbreviating things couldn’t figure out that BuJo was an abbreviation for something great. Who would have guessed? Haha!

So, what is BuJo short for? Bullet Journal. Totally makes sense now, right? I first discovered Bullet Journals on Pinterest. I was looking for simple techniques to make journaling a more consistent part of my routine. When searching through thousands of pins, I came across TONS that referenced this “BuJo,” followed by adorable journal pages filled with what looked like a planner. Needless to say, I was super confused and incredibly intrigued. I can’t think of a better combo, to be honest.

I decided to search Google for more info on this BuJo and I was pleasantly surprised to find many bloggers who are hip to this new fad. (Okay, I am not sure this is a fad, but it is new and popular amongst the organized community.) I discovered a blogger/YouTuber named Kara Benz, also known as, “BohoBerry.” I fell in love with pretty much every aspect to this amazing woman. Her Bullet Journal posts and videos gave me inspiration that I hadn’t felt in a long time.

I am a pretty organized person, but every since my surgery last March, I felt lost/disconnected. I searched for pleasure and balance down many avenues; none of which filled the void. The moment I laid eyes on these BuJos, I knew this was what I needed to bring back happiness, organization, and most of all, balance, to my life. Well, I am sure you can guess what happened next… I joined in on this awesome journal community. (No seriously. I joined a Facebook group and everything!)

What is a Bullet Journal? BulletJournal.com explains it best, y’all. A BuJo “is a customizable and forgiving organization system. It can be your to-do list, sketchbook, notebook, and diary, but most likely, it will be all of the above. It will teach you to do more with less.” Amazing! I know!

Naturally, I had to share my newfound love on Faithful Elephant. Duh! I am still new to this and am starting pretty late in the year, but I am certain that this will prove to be a healthy and effective way for me to live a balanced, happy, lifestyle. We all learn differently. Our minds grasp concepts in unique ways. You know how it is. This method of journaling/planning may work for one person and not the next. Trial and error, folks.


As of now, I am loving this method. It already suits me because I am a visual learner who responds well to color coding, symbols, and taking things one day at a time. What I love most about Bullet Journals is that you have the option to be as simple or creative as you would like. Some people get distracted with color and illustrations whereas others need it.

I cannot take credit for the creative ideas. To jump start my BuJo, I borrowed (more like borrowed without intending on returning) some of the adorable ideas that Boho Berry shared online. I couldn’t resist. As a newbie, I think it is totally acceptable, wouldn’t you say? My goal for myself is to become more independent and creative with each new BuJo. We gotta start somewhere, am I right?

Without further ado, let me share with you how I set up my BuJo for July! You will notice one or two pages I left out. They are pages that include important, personal, information. For example, I asked David if there was anything in particular he would like for me to track this month. We decided to track how often we drink water, exercise, and get more than seven hours of sleep!

Wedding Tips & Etiquette

Saturday (June 25) was the final day of the Clymer wedding celebrations. As many of you know from my wedding series on the blog, David and I were married in Hawaii on April 29. Obviously, we understood that not every person was able to make the trip to Oahu for a wedding celebration. Given that, we decided to throw a party in Maryland for those who were unable to join us at our special destination.

Some couples who choose a destination wedding prefer to give their family and friends two options for celebrating. In our case, we wanted to celebrate with as many people as we could. Thankfully, a larger than expected group did join us in Hawaii, so we were incredibly blessed. A second celebration back home was a must, even if we had a big group travel with us! David and I chose to throw a casual, “I Do BBQ” in a park near our home town. The park was right on the river, which was another must for us. (We love water… can you tell?)

David and I are SO fortunate to be surrounded by the most loving family and friends. Our parents, siblings, and wedding party stepped up and made this day just as special as April 29. To keep this event casual and fun, we went with a picnic/BBQ theme with lawn games, drinks, and lots of love from everyone. We learned a lot from our wedding experiences in the past year, so I wanted to share some wedding rules/etiquette that I learned with you all!

*These rules are in no particular order and are, in no way, mandatory. Remember, you are in charge of your own wedding. If you want to change the rules… I say do it! The wedding etiquette I learned/researched below were preferred by David and me. Again, you have the luxury of designing your own wedding the way you and your future person desire.

For the wedding guest:

  1. RSVP!!! This one is huge. I totally understand that, especially for destination weddings, sending a RSVP can be tough. Schedules change all the time and most people are hip to that. However, if you cannot make a 100% commitment (with an exception to unexpected plan changes like illness or a death in the family), just state your regrets. If more than one person in your household was invited to an event, make sure you tell them. One of our wedding guests sent in their RSVP without consulting their household. I was embarrassed when a member of that household asked me why they never received a wedding invite. It was awkward for me to say, “Uh… you did receive one. *Name* sent in the RSVP saying your household could not attend.” One more thing about sending in an RSVP…. do it for every event. If you are invited to the bridal shower, let the hosts know if you can make it. Just showing up (or not showing up without contacting the hosts) is rude and completely unacceptable.

  2. DO NOT contact the bride (sometimes not even the groom) on the day of the wedding. Listen, the bride and groom are most likely the best people to go to with wedding questions, I get that. The thing is… they are busy. Any questions you may have should be brought to the parents or even better, the wedding party. For our wedding, I provided a contact list for guests. It said, “Call anyone BUT THE BRIDE!” David was listed on there because he was comfortable taking calls throughout the day. I couldn’t tell you where my phone was on the day of the wedding. When I needed to talk to David, I borrowed my sister’s phone or my mom’s phone. I had many texts to read the night of the wedding from friends and family wishing me well, but I wished those were emails or Facebook messages. Personally, I wanted to stay off my phone as much as possible the weekend of the wedding. I still have unanswered texts in my phone from the day of the wedding. I was too busy and the time difference totally threw me off.
  3. “Unplug” your electronic devices. We did not have many guests who abused their phones during our wedding, but I have been to weddings where people were more interested in watching the wedding through their phone’s screen than their actual eyes. Put down your phone and enjoy the moment. I promise that the bride and groom will share images later. Live in the moment.
  4. Sharing photos is lovely… but, make sure the bride and groom give you the okay. We welcomed photo sharing! It was something we encouraged actually. Like the third rule listed states, though, enjoy the moment. Snapping photos is quick and easy, but the bride and groom may want to share photos from their special day online before anyone else. Ask them a few days before the wedding what they prefer if they did not clearly state their wishes ahead of time.
  5. Don’t wear white. I shouldn’t have to explain this. Don’t be Kelly Kapoor in the office as a guest at Phyllis and Bob Vance’s wedding. However, if you discuss with the Bride prior and she gives the approval… go for it.

    For the happy couple:

  1. Don’t stress on the big day! I know… easier said than done. But seriously, what’s done is done. If something doesn’t go as planned, what can you do? Remember why you are getting married! For the love, not the party.
  2. Take mental snapshots. Many people told me this and I knew it was something that I couldn’t forget. I stepped back several times throughout the day and just took it all in. Something so simple… and it is the best advice I can share.

  3. Tip your wedding vendors. This is one that I didn’t understand, but apparently it is a thing. Why should I tip a vendor I paid for to do their job lol? I kind of still don’t understand to be honest. It is important and falls under “wedding etiquette.” According to Brides.com, tipping is “supposed to be expressions of thanks for especially good service.” That said, check out the article to learn more about tipping.
  4. Choose vendors you adore! If you have a family connection, but the vendor isn’t reliable, friendly, or the person you envisioned… say no. It is YOUR day. I know budget is important. That is a given. Don’t settle, though. David and I made this mistake, unfortunately. The good thing is… a hiccup in Hawaii isn’t really a hiccup at all. I’d rather a few stressful/bad moments in paradise than back home lol!

  5. Destination wedding? Prepare for rejection. Obvious, yeah… sure. There are several guests David and I were certain would attend our big day. Unfortunately, they sent their regrets. Totally okay and understandable! Just be ready for rejection, especially if the destination is far. The group that joined us in Hawaii was better than we could have ever imagined. I wouldn’t change a single thing about that. If people do not join you, do not get upset. Choosing to throw a second party back home can help put your mind at ease when dealing with the guest list.

SOTW: Good Grief by Bastille

Vantage Points

You all know about my obsession with Bastille. When I first heard this band, I was immediately in love. One of my best friend’s, David Cook, and I went to a private concert at the British Embassy and had a chance to meet the band. We then went to another concert that same night at a public venue. They were incredible. That’s all that needs to be said.

Yesterday, the band officially released their new song, Good Grief, on Spotify. The song is absolutely amazing. I am SO excited to hear more from these guys. David and I will definitely be planning a trip to see them in concert again soon!

I know it has been a little while since I shared a song of the week, so I thought this new song would be a perfect choice for this week. Check out the song and let me know what you think! Also, since it is Friday… I had to share a flashback photo from when David and I met Bastille. Happy Friday!


Coconut Flour and Pumpkin Pancakes

Healthy Recipe

If you weren’t aware… my right leg is currently in a cast and I am stuck at home recovering from my most recent surgery. One struggle I have, aside from being on crutches, is cooking. Most of my meals are prepared by someone who can easily get around the kitchen, carry items without dropping them, and can stand for longer than 2 minutes straight without getting tired.

Today, I was hungry and realized there were no leftovers for me to easily prepare by simply pressing a few buttons on the microwave. My options were to figure out something simple to make, wait to eat until dinner, or indulge on four butterfingers for lunch. The last two options were out of the question. In order to heal, I need to eat relatively healthy. I don’t need to stick with all veggies or anything, but butterfingers are probably on the “do not eat” list.

I searched our pantry and there it was… Coconut flour. Not too long ago, I made coconut flour, rice protein, and banana pancakes. They weren’t my favorite, but they were very easy to make. I decided to go ahead and make those pancakes again until I saw the best ingredient I could ever imagine appearing before my eyes. PUMPKIN! I know that seems like a random ingredient, but there is SO much you can do with pumpkin puree.

One recipe I love to make with pumpkin is from Hungry Girl. She uses pumpkin puree and devil’s food cake mix to make brownie muffins. They are moist, chocolaty, and only 181 calories per muffin. I figured there had to be a recipe out there that combined coconut flour and pumpkin. After a quick Google search, I found my lunch recipe!


I chose to stick with the pancake theme and make “Healthy Pumpkin Pancakes” that are also gluten-free. I do not have a gluten allergy, so that was not a part of my search criteria. It just worked out that way. So for those of you with gluten allergies… this is a recipe I 100% recommend.

These pancakes are SUPER DUPER easy to make. They taste incredible and I will definitely be making them again. I could make the entire meal sitting in my chair… Granted I did stand up like two times to flip the pancakes. But, it was no strain on me at all. Thank goodness!

So, let’s get to it, shall we? Below is the Healthy Pumpkin Pancakes from Paleo Grubs. All credit goes to them! Thanks for the awesome recipe. I did make one or two changes based off of what was in my pantry, but I do not think it made much of a difference. For example, we only had soy milk, so I had to use that. Usually we have almond milk. They must have been out at the grocery store. Also, I chose to ditch the nutmeg. I cannot stand nutmeg. I added extra cinnamon and vanilla instead. I much prefer those flavors anyway.


1/4 cup pumpkin puree
3 tbsp almond milk
1 tbsp honey
3 eggs
1 tbsp coconut oil, melted, plus additional for pan
1 tsp vanilla
1/4 cup coconut flour
1 tsp cinnamon
Pinch of nutmeg
1/2 tsp salt
1/4 tsp baking soda

In a large bowl, whisk together the dry ingredients – the coconut flour, cinnamon, nutmeg, salt, and baking soda. Then in a separate bowl, whisk together the wet ingredients – the pumpkin puree, almond milk, honey, eggs, oil, and vanilla. Add the dry ingredients to the wet ingredients. Stir together until just combined.

Heat a griddle or non-stick skillet to medium heat. Coat pan with coconut oil. Pour about 1/4 cup of batter onto the skillet. Cook for 2-4 minutes until the bottom is cooked through, and then flip. Cook for another 2-4 minutes until lightly browned. Repeat with remaining batter. Serve warm and enjoy!

This recipe made 8 pancakes for me. It all depends on how big you choose to make them. I used an ice cream scoop to measure out the amount of batter per pancake. The choice is yours! I also chose to top the pancakes with a little bit of 100% pure maple syrup. I find pancakes to be dry, so the syrup helps with that. Keep an eye on how much you use, though. Too much sugar will ruin the pancakes (and your body).

It has been quite some time since I sat down and talked a bit about who I am and what my blog is all about. With the recent changes to my blog, I thought this would be a fun opportunity to update my “about me” and share some words about Faithful Elephant.

I found a fun, informative, Q&A type post on a blog I recently began to follow, Sarah Laughed. Any questions that weren’t entirely relevant to me, I of course edited and found different questions online.

Followers from the beginning to the newest of the bunch, enjoy learning a little about me. A lot has changed since my first post back in 2013.

Name: Kristin… but a lot of friends and family call me Krick/Kricket/Krickey

Age: 24

Nationality: I am a citizen of the United States of America! My ancestors hailed from Italy and Scandinavia. I am proud to be an American!


Favorite food: Oh this question is one I can never answer definitely. Honestly, nothing beats fresh, homemade, meals that are cooked with natural and organic ingredients. Currently, I am in love with a meal I discovered through Blue Apron. It is Lamb & Risotto-Style Ditalini Pasta. Absolutely incredible.

Favorite flavor of tea: Apricot! I can smell it now… so lovely.

Favorite book: Yet another question that feels impossible for me to answer confidently. I have not had the patience recently to read, so I know I am missing out on many amazing books that have been recommended to me. Actually… no. I have my answer. One book, that has always had a special place in my heart since I was a child is The Last of the Really Great Whangdoodles by Julie Andrews. This adorable, fun, and imaginative book sparked my love for reading. I will never love a book more than the one that encouraged me to read as a kid.

Favorite movie: Come on… these “favorites” are tough! I am a lover of many movies. I adore the Star Wars movies, Harry Potter movies (and books), and of course, any good comedy. A movie I could watch over and over, though, without getting sick of it, is probably That Thing You Do! This movie has been a favorite of mine since I was a young girl. It has humor, drama, music, and Tom Hanks. What more do you need?

Favorite TV shows: Game of Thrones, The Office, Gilmore Girls, New Girl, Wayward Pines, King of the Hill, Master of None, the list goes on and on and on…


A little about the blog

Favorite post to write: I enjoy writing all types of posts. I loved talking about the wedding, giving advice on friendship, and sharing some of my favorite music. One post that stands out to me is Master Your Thoughts?

Most frustrating post to write: If I am frustrated when writing a post, I probably will trash it and wait to write until the frustrations are gone. I do have a post that was fueled by frustration, though: Imitation is the Sincerest Form of Flattery. 

Post I’m most proud of: Gosh this is tough. I have many posts that I am proud of and pleased with. If I had to choose, I would say I am most proud of my post It is All About PerspectiveThis post was one that I always thought about writing, but could never find the words. I deleted it a million times because it never felt perfect. After a thoughtful discussion with my boss, I finally figured it out. I found the words to describe a feeling that completely changed me.

Popular post I didn’t think would be a big deal: A post that I wrote simply to hold myself and David accountable was the Friday F Day Challenge post. Although I did put time and effort into writing it, I was very surprised at the number of people who would find it to be helpful, interesting, and worthy of sharing.

Post I was expecting to take off that didn’t: No posts I ever write are intended to “take off.” I blog because I love it. I blog for friends and family. I blog to share completely unwarranted advice. I really do it because my hope is that someone, somewhere, will read it and smile.

Blogger or youtube vlogger who has had the biggest impact on you: One blogger that has always had a positive influence on me is Stephanie Verni of Steph’s Scribe. I was fortunate enough to have her as a professor at Stevenson, but her blog always inspires me. For YouTube Vloggers, I adore ItsJudysTime, Shaaanxo, and recently, Sarah Therese.


One thing you want followers to know: I want my followers to know that blogging is something I do because I love to write. My blog is an opportunity for me to connect with people from all over this beautiful world and I try to do so in a fun, informative, and sometimes sassy way. Nothing pleases me more than to read a comment or to see a blog post being shared. So, thank you for reading and following me as I share advice, tips, and stories from my life.

Recipe of the Week: Açaí Bowl

When in Hawaii, David turned me on to açaí bowls and I will never be able to live without them ever again. These bowls gave me so much energy and was packed with vitamins, natural sugars, and best of all, they were cold! I know that sounds silly to love that these bowls were cold, but after a long hike, we needed something to cool us down.

Being that it is hump day and I am recovering from my recent surgery, I needed a pick-me-up, much like I did almost daily in Hawaii. About a week or so after our trip, I made it a priority to perfect the açaí bowl so I could get my fix. What I realized is, nothing will EVER top the açaí bowls in Hawaii. The fresh fruit, honey, and atmosphere there completely changes the recipe. I can promise you that. However, I was still determined to make a bowl that at least made me feel energized and happy, just like I felt in Hawaii.

Before diving into the recipe I follow, I wanted to discuss a few facts/benefits of açaí bowls:

  • Açaí is a fruit native to South America that is high in antioxidants, minerals, and fiber.
  • Açaí is low in sugar, too!
  • Açaí bowls are essentially smoothies in a bowl with whatever you want on top! What is so great about these bowls is that you can determine exactly what you would like to put in them. The choice is yours!
  • These bowls are a hit in Brazil… especially on the beach. I can see why they are popular in Hawaii, now.

Okay, enough about the bowls. I highly recommend researching more about açaí, though. There is a lot you can do with this amazing fruit!

On to the recipe. As stated above, açaí bowls are a fantastic opportunity for you to get creative and make a bowl exactly how YOU like it. I am still an amateur bowl-maker, but I am branching out from my favorite recipe slowly but surely. It is important that I stress that this bowl can include almost any fruit or veggie you desire. Some fruits/veggies add extra creaminess while others simply add more flavor. Consider what benefits you are craving the day you make the bowl and go for it!

Below is my favorite (so far) açaí bowl recipe that I wish could hold a candle to the ones I craved daily in Hawaii 😉

Ingredients for smoothie:
1/2 cup of unsweetened almond milk/coconut water/other preferred liquid
1/4 cup of frozen blueberries
1/4 cup of frozen strawberries
1 medium-large sized banana (can be frozen or room temp)
1 unsweetened açaí smoothie pack
1 tbsp of vanilla extract
1 heaping tbsp of organic raw white honey

Ingredients for topping:
organic raw white honey

Begin by blending the almond milk, blueberries, strawberries, honey, and banana. The fruit does not have to be frozen, but I find that it helps with the thickness of the smoothie. Next, give the mixture a stir with a spoon or spatula and add the vanilla extract. Before adding the açaí smoothie pack, break up the pack using a hard surface or crab mallet.

*Note, the açaí smoothie pack instructions may say to run under hot water, but I found that this liquefies the pack too quickly. This can affect the thickness of the smoothie.

Add the smoothie pack to the blender and continue to blend the ingredients until desired consistency. Remember that the consistency should be thicker than a regular smoothie. The thickness of the mixture is part of what gives the açaí bowl its charm! 🙂

Either after the mixture is prepared, during, or prior, prepare your toppings. Personally, I prefer to have the toppings prepared before blending the ingredients. This keeps the mixture from melting before assembling the bowl.

To prepare the toppings, I slice strawberries and bananas relatively thin. Again, this is an opportunity for you to be creative. If you prefer more bananas, add more bananas. If you prefer no honey, totally go ahead and nix it. After slicing the banana and strawberries,  I prepare the raw honey. This type of honey is in a solid form, so it needs to be melted in order to drizzle it on top of the bowl. Microwave it to your desired consistency. I microwave in 15 second increments until it is just right for drizzling!

Before adding the smoothie mixture to the bowl, I like to sprinkle granola on the bottom of the bowl. This allows me to get some granola in every single bite from top to bottom. I then pour the smoothie in the bowl and level it off with the back of a spoon. I proceed to layer the top of the bowl more granola, then strawberry slices, a small handful of blueberries, and the slices of bananas. My last step is my favorite part… drizzling honey on top and watch it glisten in the light!

This meal can be very high in sugar. Between the natural sugars from fruit, the honey, and… well, the drizzle of honey at the end, you can go overboard. I always try to be conscious of how much sugar I am adding to the bowl. I cut sugar in certain aspects of the bowl wherever I can. If you notice in the ingredients list, I use unsweetened almond milk and the unsweetened açaí frozen smoothie pack. Many recipes call for vanilla almond milk, but that, too, can have added sugars. This is why I add vanilla extract! You control the amount of sugar that is added in this recipe, so just be aware.
